Vegan Brownie Cookies Sandwiched with Salted Caramel Cream

These vegan brownie cookies are not only the best of both worlds, but they are made extra special with a delicious creamy caramel layer sandwiched in between! And did we mention you can make them in just 5 simple steps?

Vegan Brownie Cookies Sandwiched with Salted Caramel Cream


Ingredients

Scale

Brownie Cookies

  • ½ cup gluten free flour or regular flour
  • ⅓ cup cocoa powder
  • ¼ cup coconut sugar
  • ¼ cup maple syrup
  • ¼ cup coconut oil
  • 1 flex egg (combine 1 tbsp of flax seed meal with 3 tbsp water, set to the side for about 5 minutes.)
  • ½ tsp baking powder
  • ½ tsp vanilla bean extract
  • ½ tsp salt

Salted caramel cream

  • ¼ cup vegan margarine
  • ¼ cup vegan caramel sauce
  • 1 ⅓ cup powdered sugar
  • ½ tsp salt
  • ½ tsp vanilla bean extract

Instructions

To make the cookies

  1. Preheat your oven to 180°C/360°F.
  2. In a large bowl, mix together melted coconut oil, sugar, maple syrup, and vanilla until combined.
  3. Add in your flax egg and stir.
  4. Add baking powder, salt, cocoa powder, flour, and mix well. Use a small cookie scoop to form balls and place about 2 inches apart on a cookie sheet lined with parchment paper. Bake for 12-15 minutes. Allow to cool completely before assembling.

To make the cream

  1. Beat together the margarine, sugar, salt, and vanilla. Add caramel sauce beating until smooth.

  2. Pipe cream filling on the bottoms of half of the cookies; top with remaining cookies. Enjoy!
