Servings: 4 -6 servings
Ingredients
- 1 bag of your choice of French fries - cooked according to package instructions
- 2 cups vegan ground beef - sautéed
- 6 –8 slices of vegan cheddar cheese - left out to get to room temp
- ½ cup finely minced onion
- Handful of pickles - chopped
Thousand Island Dressing
- 6 tbs cashew butter
- 6 tbs vegan mayo
- 1 tsp onion powder
- 1 garlic clove - minced
- 4 tbs ketchup
- 2 tbs lemon juice
- 3 tbs water
- 2 tsp white vinegar
- ¼ tsp salt
- 4 tbs sweet pickle relish
Instructions
- Place all dressing ingredients except for pickle relish in a blender or food processer, blend to combine. Add relish, stir by hand to combine and set aside
- Turn on the broiler in the oven, arrange french fries on a baking sheet, and sprinkle on ground beef and onions, and lay the slices of cheddar on top. Place in the oven and broil until the cheese melts, about 5 minutes.
- Remove from the oven, and top with pickles and thousand island dressing, leaving some to dip in!
Notes
- If you’re having trouble with the cheese melting you can try spraying with cooking spray before broiling, or you can melt the cheese in a small saucepan with a splash of vegan milk and pour it over the fries instead.
