Vegan Cheesy Nachos



  • 200g of nachos
  • 1/3 green pepper cut in cubes
  • 1/4 red onion cut in cubes
  • 1/2 sliced, red chilli pepper
  • 8 sliced cherry tomatoes
  • 1/2 cup black cooked beans
  • 10 leaves of coriander
  • for the avocado sauce:
  • 2 avocados
  • a pinch of salt
  • the juice of a lime
  • a pinch of ground black pepper
  • for the cheesy sauce:
  • 1/2 cup cashews
  • 1/2 cup nutritional yeast
  • 1/2 cup water
  • a pinch of salt
  • the juice of 1/2 lime
  • watermelon agua fresca:
  • 1/2 watermelon
  • 2 cup of ice cubes
  • 4 mint leaves
  • some lime, like 2 slices


  1. Let´s start by preparing the sauces:
  2. To make the avocado sauce just simply blend all the ingredients listed above, then pour the avocado sauce in a bowl. Do the same to prepare the cheesy sauce.
  3. To serve the vegan nachos, start by putting the nachos on the base, then add the sauces, top it all with green pepper, onion, red chili, beans and some coriander, you can add too some fresh lime.
  4. To make the watermelon agua fresca, blend the watermelon with the mint leaves, serve in a large glass with ice cubes and add a slice of lime.
