Vegan Chocolate Brioche Bread

This vegan chocolate brioche bread is kind of a love child of bundt cake, chocolate babka, and bread, and is an absolutely irresistible festive treat!

Vegan Chocolate Brioche Bread


  • 2 tsp yeast
  • 320g strong white bread flour
  • 60g vegan butter
  • 4 tbsp of sugar
  • 1 tsp salt
  • 2 flax eggs
  • 150g lukewarm water
  • (notes: flax seed egg plus water is 200g)
  • 2 tbsp of vegan butter added later
  • zest of 2 oranges
  • 75g of dark chocolate


  1. Make 2 flaxseed eggs from 2,5 tbsp of ground flaxseed and 6 tbsp of lukewarm water. Set aside for a minimum of 10 minutes to allow the mixture to set.
  2. Once set, sieve your flaxseed and water mixture by pressing out all the liquid through a sieve using a spoon/spatula. Once sieved, weight the liquid (should be approx. 50-60 grams).
  3. Add lukewarm water until you are left with 200g of flaxseed and water mixture in total.
  4. Place flaxseed and water mixture in the bread pan. Add sugar and yeast.
  5. Add flour first. Then add salt, then orange zest and lastly, butter. Important: Make sure the salt doesn’t touch the yeast.
  6. Turn on the breadmaker (setting 12).
  7. When the machine beeps, add another 2 tbsp of butter.
  8. Let it finish the cycle until the first rise is completed.
  9. Take the bread pan out of the machine and fold in chocolate chips to create swirls.
  10. Let proof for 45-60 minutes until doubled in size.
  11. Bake at 160ºC fan / 180ºC regular oven (320/350ºF) for 40 minutes.
