Chocolate Gingerbread Waffles



Dry ingredients:

  • 1 ¼ cup rice flour
  • 3 tbsp tapioca flour
  • 1 tbsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon
  • 1 tsp ginger powder
  • 1 tbsp cacao powder

Wet ingredients:

  • 3 tbsp blackstrap molasses
  • 1 ½ cups non-dairy milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract


  1. In separate bowls mix dry and wet ingredients, stir wet into dry. 
  2. Divide batter in two and add the cocoa powder + 1 extra tbsp of non-dairy milk to 1 part. 
  3. Cook on a waffle iron and serve immediately so it stays crispy.
