Vegan Crêpes


  • Ingredients:
  • 1 cup all-purpose flour
  • 1,5 cup almond vanilla drink
  • 1/2 shot brown rum (optional)
  • zest of 1/4 organic lemon
  • pinch of salt
  • splash sparkling water
  • brown sugar, cinnamon


  1. Mix all ingredients in a bowl and whisk until well combined. Cover the batter and let it rest in the fridge for at least 20 minutes (whisk again before using). Now heat up a non stick frying pan over medium heat, lightly cover the pan with oil. Add ~1/3 cup (depends on your pan & how thick you prefer your crêpes) of batter to the pan and distribute evenly until it covers the bottom of the pan. Cook until the underside is slightly brown and quickly turn the crêpe. Sprinkle brown sugar and cinnamon onto the crêpe while the underside is cooking through for another 1-2 minutes. Slide crêpe out of the pan and repeat with the rest of your batter. Place your crêpes on a plate and garnish them with your topping of choice e.g. melted dark chocolate, maple syrup and fresh fruits.
