Vegan Green Pea Avocado Pesto with Flavorful Air Fryer Potatoes

Vegan Green Pea Avocado Pesto with Flavorful Air Fryer Potatoes


Ingredients

Scale

Green pea avocado pesto: 

  • 1 minced garlic clove
  • 1 very ripe large avocado
  • 3 tbsp fresh lemon juice
  • ¼ cup pinenuts
  • Handful of basil leaves
  • 1 cup defrosted green peas
  • ⅓ cup vegan parmesan (or 3 tbsp nutritional yeast)
  • ¼ cup+2 tbsp water
  • salt/black pepper to taste

Potatoes:

  • 2 russet (or 4 small Yukon gold) potatoes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • salt to taste
  • olive oil (optional)

Instructions

Green pea avocado pesto: 

  1. Blend all the ingredients on high.
  2. Adjust water and lemon juice as needed to get desired consistency and taste. Add salt/black pepper to taste. 

Potatoes: 

  1. Cut 2 russet (or 4 small Yukon gold) potatoes into bite-sized pieces. 
  2. Toss with 1 tsp garlic powder, 1 tsp onion powder, ½ tsp paprika, salt to taste. (Optional: Add enough olive oil to coat lightly.) 
  3. Cook in the air fryer at 400ºF/200ºC for about 25 minutes until golden brown, tossing halfway. 
  4. Option 2: roast potatoes on a lined baking sheet in the oven at 200ºC/400ºF until golden brown, about 20 minutes, tossing halfway.
