Vegan Lemon Cake

Ingredients

  • Wet ingredients:
  • 400ml coconut milk or almond milk
  • Zest of 1 lime
  • Juice of 1 lime
  • 1/2 tsp vanilla extract
  • 1/4 cup melted coconut oil
  • 4 tbs maple syrup
  • Dry ingredients:
  • 400 g spelt flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt 6
  • 8 tbs coconut cream

Instructions

  1. Mix wet and dry in bowl until you get a smooth not to thick dough
  2. This makes 2 small cakes or 1 big you can cut in two Grease your cake pan, pour the dough and bake on 175C/347F
  3. Let it cool and decorate the cake with whipped coconut cream, raspberries and pistachios.
