
Ingredients
- 3/4 cup almond flour
- 1/3 cup all purpose flour
- 4 Tbsp cornstarch
- 1 1/2 tsp baking powder
- 1/4 salt sea salt
- zest of 1 lemon
- 1/4 cup brown or coconut sugar
- 3 Tbsp coconut oil or vegan butter - melted
- 1/2 cup unsweetened plant-based milk
- 1 vanilla bean or 2 tsp vanilla extract
- 1 Tbsp freshly squeezed lemon juice
Instructions
- In a large mixing bowl, combine almond flour, all purpose flour, cornstarch, sugar, baking powder, salt, and lemon zest.
- Whisk together wet ingredients. Then pour wet ingredients to dry. Gently mix until just combined. Refrigerate the batter at least 20 minutes or until batter thickens.
- Brush madeleine pan with melted vegan butter.
- Scoop batter into moulds using a mini ice cream scoop.
- Bake at 170C/340F preheated for 18-20 minutes until edges begin to become a little golden.
- Allow Madeleines to cool slightly and transfer to a cooling rack to cool completely.

Delicious! I made them many times, but i m wondering, wouldit work with potato starch instead of corn starch?
Hi Julie! I’m not the creator of this recipe but I would think that potato starch (or any thickening agent/starch like arrowroot or tapioca) would work for that matter. I used tapioca and it worked out just fine, so I’d assume that would be the same for potato. Happy madeleine baking ๐
Hi Iโm trying the recipe now, hopefully it works for me :@. I did add the lemon, instead I added orange zest and juice hopefully that was ok to do. But my question is, I didnโt notice the icing part for this recipe. Did I miss it?

Hello! The icing was indeed not included in the recipe, but here is the royal icing recipe from this recipe’s creator @nm_meiyee that you can use:
2 tbsp aquafaba
1/4 tsp cream of tartar
1-2 tsp freshly squeezed lemon juice
1 1/2 to 2 cups sifted powdered sugar
To make the icing, beat aquafaba with cream of tartar and salt in a stand mixer until foamy. Add all powdered sugar and beat on low speed until thick. Beat in supercolour powder and beat until thickened. Thin the icing with lemon juice to the desired consistency.
