Vegan Meatballs


Ingredients

  • For the vegan meatballs:
  • 2 sweet potatoes
  • 5 carrots
  • 1/2 onion
  • 2 cans of drained chickpeas
  • 1/3 cup olive oil
  • 1 tbsp dried oregano
  • 1 tbsp dried rosemary
  • 1 tbsp curry powder
  • 1/2 tsp black pepper powder
  • 1/2 cup vegan cheese
  • fresh coriander leaves to top it all
  • for the tomato sauce and rice:
  • 2 chopped carrots
  • 2 chopped garlic cloves
  • 1/2 chopped red onion
  • 1/2 tsp sea salt
  • 1 tsp dried oregano
  • 1 tsp dired rosemary
  • 600g tomato sauce
  • 1 tsp maple syrup
  • 2 tbsp olive oil
  • 1 cup rice
  • 2 and 1/2 cups water
  • preparation time: 30 minutes
  • total time: 1 hour
  • serving size: 18 vegan meatballs – 4 serves

Instructions

  1. Preheat the oven to the highest temperature and prepare the veggies while it’s heating.
  2. You´ll need two trays. In the first one, put the cubed sweet potatoes, the carrots, the chopped onion and then top it all with some olive oil, oregano and rosemary, mix it well and put it in the oven.
  3. In the other tray, add the chickpeas and some curry, black pepper and olive oil.
  4. It is important to place the tray with the veggies on top of the tray with the chickpeas. Leave them in the oven to cook for 25 minutes at the highest temperature.
  5. Once the veggies and chickpeas are cooked, pour them in a food processor and blend until you get a smooth consistency but don’t worry to leave some bigger pieces as you´ll get more texture.
  6. Then pour the mix in a bowl and add the vegan cheese, mix it well and start making the vegan meatballs shape.
  7. Cover a tray with some baking paper and cook the meatballs in the oven at the highest temperature for 10 minutes, until the vegan meatballs are golden.
  8. Whilst the vegan meatballs are cooking in the oven we´ll prepare the tomato sauce and the rice.
  9. In a pan at medium heat, cook for 15 minutes the chopped carrots, maple syrup, garlic, onion, rosemary and oregano. Then add the tomato sauce and cook at medium heat to reduce the water.
  10. To prepare the rice just follow the manufacture´s instructions and add some pepper and salt.
  11. To serve just add some rice, vegan meatballs your delicious tomato pasta and top it all with some fresh coriander.
