Vegan “Snickers” Bars



Bottom layer:

  • 2 cups rinsed pitted dates
  • 1 cup almond flour
  • 2 heaping Tbsp peanut butter
  • 1/2 cup coconut flour
  • pinch himalayan salt

Caramel layer:

  • 1 3/4 cup pitted dates
  • pinch himalayan salt
  • 1 Tbsp coconut flour
  • 1/4 cup coconut sugar
  • 1/4 cup unsalted peanuts

Chocolate cover:

  • 200 g dark chocolate (or prepare your own with coconut oil, cacao and sweetener)


  1. Start of by preparing the bottom layer. Put all of the ingredients in a high speed blender and mix until a dough consistency appears.
  2. Press down in a small baking pan lined with a baking sheet.
  3. Next prepare the caramel layer by put all the ingredients (except for the peanuts) in a high speed blender and blend until creamy.
  4. Spread over the bottom layer and press down the peanuts on top.
  5. Put in the freezer to set for 30 min.
  6. Melt the chocolate.
  7. Take out the snickers cake from the freezer and cut in to bars.
  8. Cover the bars in chocolate and the set in the fridge.
