Vegan Spaghetti Bolognese

  • Recipe for the sauce:
  • 2 shallots diced
  • 1 garlic clove diced
  • 1 block smoked tofu minced
  • 1 can diced Italian tomatoes
  • 1|2 cup cherry tomatoes halved
  • 2 tbsp tomato paste
  • 2 tsp dried Italian herbs
  • Pinch of red chili flakes
  • Pinch of cinnamon
  • 2 tsp nutritional yeast
  • 1|4 cup dry white wine
  • 1 tbsp olive oil
  • Sea salt + black pepper to taste
  • Handful fresh basil


  1. Heat oil in a pan and sauté shallots, garlic and tofu until golden.
  2. Add spices and tomato paste.
  3. After 2 min add the wine and tomatoes [canned + fresh]. Season with s+p.
  4. Simmer on low for 10 min. Add nutritional yeast and basil.
  5. Serve with your favorite spaghetti.
