- 125g dried vegan tortellini (or 75g dried pasta without filling)
- 1 tbsp olive oil 1 garlic clove, minced
- 1 tsp herbs, finely chopped
- 1/4 tsp salt pinch of pepper (optional)
- splash of lemon juice
- Cook tortellini and drain.
- Mix all remaining ingredients and combine with tortellini/ pasta.
- Serve with fresh cherry tomatoes and basil.
