Vegan tortellini tricolore with garlic pesto


Ingredients

Scale
  • 125g dried vegan tortellini (or 75g dried pasta without filling)
  • 1 tbsp olive oil 1 garlic clove, minced
  • 1 tsp herbs, finely chopped
  • 1/4 tsp salt pinch of pepper (optional)
  • splash of lemon juice

Instructions

  1. Cook tortellini and drain.
  2. Mix all remaining ingredients and combine with tortellini/ pasta.
  3. Serve with fresh cherry tomatoes and basil.
  4. Enjoy!
