A great way to ring in the new year is a scrumptious breakfast, don’t you think? Make it special with these vegan vanilla bean pancakes that are gluten-free, easy to make, and absolutely delicious!
Servings: 10 -12 pancakes
Ingredients
- 1 cup and 3 tbsp soy milk or other plant-based milk
- 1-2 tbsp maple syrup
- ยผ cup thick vanilla coconut yogurt
- 1 vanilla bean or use 1 tsp vanilla extract
- 1 ยฝ cup buckwheat flour
- 3 tsp baking powder
- Tiny pinch of salt
Instructions
- In a large mixing bowl whisk together the milk, yogurt, maple syrup, and vanilla (if using vanilla bean, split the bean lengthways and scrape the inside seeds out). In a separate bowl sift the flour, baking powder, and salt. Add the dry ingredients to the wet and gently combine.
- Heat a non-stick pan to medium heat. Pour ยผ cup of batter, once bubbles appear flip the pancake (cooking 1-2 minutes each side). I served it with vanilla yogurt, chocolate sauce, berries, and banana.
