Veggie Couscous Bowl


Ingredients

  • Arugula, baked sweet potato fries, avocado with sesame seeds, garlic pearl couscous, peas, corn, purple cabbage, cucumber noodles & creamy garlic tahini dressing
  • Creamy lemon tahini dressing (makes several servings):
  • 1/2 cup tahini
  • juice of 1 lemon
  • 1 garlic clove
  • 1/8 tsp. cumin
  • pepper to taste
  • water for thinning (I used almost 1/2 cup)
  • blend tahini, lemon juice, garlic & cumin.
  • add water to achieve desired consistency.
  • add salt and pepper to taste.
