- Arugula, baked sweet potato fries, avocado with sesame seeds, garlic pearl couscous, peas, corn, purple cabbage, cucumber noodles & creamy garlic tahini dressing
- Creamy lemon tahini dressing (makes several servings):
- 1/2 cup tahini
- juice of 1 lemon
- 1 garlic clove
- 1/8 tsp. cumin
- pepper to taste
- water for thinning (I used almost 1/2 cup)
- blend tahini, lemon juice, garlic & cumin.
- add water to achieve desired consistency.
- add salt and pepper to taste.
