Yellow Lentil & Veggie Soup/Stew



  • 1/4 cup yellow lentils (measured dry), 2 chopped green onions, 1/4 small diced acorn squash, 1/4 diced yellow squash & 1 diced red bell pepper cooked in about 2-3 cups of veggie broth, 1/4 cup coconut milk, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp ground coriander seed & saffron for about 25-30 min. Add 2 cups of shredded kale towards the end and top it with fresh cilantro. Enjoy!
