Yogurt Berry Parfait with Homemade Granola


Ingredients

  • 1 cup coconut yogurt
  • blueberries
  • raspberries
  • blackberries
  • homemade granola (recipe below)
  • unsweetened shredded coconut flakes
  • 1 tsp maple syrup (optional)
  • HOMEMADE GRANOLA
  • 3 cups oats
  • 1 cup raw almonds
  • 1/2 cup raw pumpkin seeds
  • 1 tbsp cinnamon
  • pinch salt
  • 1/4 cup grapeseed oil (may use coconut oil instead)
  • 1 tsp pure vanilla extract
  • 1/4 cup maple syrup

Instructions

  1. GRANOLA
  2. Preheat your oven to 350 degrees F
  3. In a large bowl mix together all the dry ingredients, then add the wet ingredients. Stir to combine well
  4. Pour out onto a baking sheet lined with parchment paper and bake for about 20 minutes.
  5. **NOTE: Toss it a couple times and keep an eye on it, it may burn easily
  6. YOGURT BERRY PARFAIT
  7. Place your yogurt into a cup, bowl or plate (whatever you prefer) and top with granola + berries + coconut and maple syrup if using.
  8. NOTES
  9. ** I don’t give specific measurements for the toppings because that’s the fun of it! Add as much or as little as you’d like.
  10. ** Make your granola the night before so it has time to cool and crisp up overnight
