This no-cook Vegan Overnight Steel Cut Oats recipe offers a convenient and delicious alternative to traditional oatmeal. Prepared with almond milk, maple syrup, peanut butter, and other wholesome ingredients, the mixture is left to soak overnight for a hassle-free breakfast. The result is a delightful, soft, and chewy oatmeal that can be customized with your favorite toppings.
In a medium mixing bowl (microwave safe) add the almond milk, maple syrup and peanut butter. Whisk to combine. Pour in the still cut oats, chia seeds, cinnamon and a pinch of sea salt. Whisk again.
Microwave the mixture for 2 minutes, stir again. Cover and refrigerate the oat mixture until thickened to an oatmeal consistency (6 to 12 hours). When ready to eat, serve in bowls and add your favourite toppings. (I used banana, blackberries, peanut butter and coconut flakes).
Notes
Overnight steel cut oats can be made up to 3 days in advance. Store in an air-tight container in the fridge.
I have tested this recipe with steel cut oats and quick cooking steel cut oats. Both work well!
