Plantain Black Bean Burger

Ingredients

To make patties

  • 3 tins black beans - drained
  • 1 plantain - diced into small pieces
  • 3 cloves of garlic - minced
  • 1 small red onion - diced
  • 3/4 cup gluten-free oatmeal
  • 1 tsp cumin seeds
  • 1 tsp chilli powder
  • 1 tsp paprika
  • 1 chilli - chopped
  • Coriander - a handful

To make a burger 

All these are optional.

  • 1 plantain - sliced and grilled (optional)
  • Red onion rings
  • Lettuce or spinach
  • Beef tomato - sliced
  • Vegan/plant-based mayo
  • Peach Salsa - optional
  • Vegan brioche bun - optional

Instructions

  • Preheat the oven to 180℃. Place black beans into a mixing bowl, add oatmeal, onions, garlic, and chili, and mix well until combined. Then add seasonings, plantain, and coriander. Mash the bean mixture using a potato masher. You want a mushy consistency.
  • Use a Burger Press kit to create your patties. If you do not own one of these, scoop about 1/2 a cup of the mixture, and place it onto your hands. Mold into a burger pattie form.
  • Transfer to a baking tray and place in the oven for 25 minutes. Once they are cooked, leave them to cool down for 5 minutes to allow them to bind.
  • Transfer them into a large container and place them into the refrigerator.
  • Build your burger the way you like when ready to eat. Enjoy!
