Pumpkin Banana Bread

A delicious vegan pumpkin banana bread loaf that's perfect for colder days!

Ingredients

  • 1 1/2 ripe bananas mashed
  • 1/2 cup pumpkin purée
  • 1/4 cup coconut oil melted
  • 1 tsp of chia seeds
  • 1/2 tsp vanilla extract
  • 5 1/2 tbsp coconut yogurt
  • 6 tbsp coconut sugar
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp pumpkin pie spice mix
  • 5 1/2 tbsp vegan chocolate chips

Instructions

  • Preheat oven at 375 F.
  • In a mixing bowl, combine all ingredients.
  • Grease a loaf pan or line it with a parchment paper.
  • Pour the batter into the loaf pan and fill it up to center of the pan. Don’t overfill it.
  • Top the loaf with banana slices and pumpkin seeds.
  • Bake for 25-30 min until golden brown on top and a toothpick comes out clean. Let the loaf cool completely before slicing. Enjoy!
