In a saucepan drizzle the oil and add the chopped veggies and let it cook for 5 min. Add the tofu to the pan by crumbling it over the veggies and add the spices, salt, and pepper.
Stir adding water (or more oil if not using a nonstick pan) if needed until the tofu is fully covered in the seasonings.
While it's cooking, place the toast in the toaster.
Add the spinach a few minutes before serving to the scram to let it steam down.
Once the toast is ready, mash on the avo, squeeze on some lemon, and season with the salt, pepper, and chili flakes.
Plate the tofu scram and you are ready to eat!
