For the Dough: (makes 3 large pizzas):
Dough
In a bowl, combine all the dry ingredients thoroughly and create a well at the centre of the mixture.
Add in the oil and water and mix with a spoon or fork until all the flour has been incorporated. Depending on the brand of flour and microclimate in your kitchen, you might need some more water. If you do, add about a tablespoon of water at a time until you are able to form a dough.
Knead the dough for about 10mins on a clean well-floured surface until it is smooth and springs back quickly when pressed.
Shape the dough into a ball, and place it back in your mixing bowl.
Cover the bowl and set aside in a warm dry place for 2hrs.
Sauce
If you're not using a store-bought pasta sauce, pour the passata into a saucepan followed by the garlic and ginger and cook them for about two minutes or until fragrant.
Add the spices, to taste, and stir well.
Let the sauce simmer for about five minutes before you turn off the heat and set it aside to cool.
Cheesy Topping
Blend enough oats with water to make a thick, but pourable cream. Once the cream is made, pour it through a fine sieve to separate the oats bits from the cream.
In a frying pan, combine the olive oil, onions and garlic and gently heat them together until fragrant.
Stir in the flour until a thick roux is formed and cook the flour for about a minute
Increase the heat a little then pour the oat mixture in the pan slowly while whisking the contents of the pan until the roux dissolves in it. Do not pour all the cream in at once. Let the sauce thicken before adding more. The final consistency should thicker than a bechamel sauce, but not too thick.
Turn off the heat and let it cool a bit.
Pizza
Uncover the bowl containing the dough and deflate it. Place the dough on a scale to measure its weight then divide it into 3 equal parts and form each part into a ball.
On a flat baking tray lined with parchment paper, press each dough ball and stretch them into circles with a diameter of at least 30cm.
Pour and spread a thin layer of your sauce over the pizza doughs followed by as much of the toppings as you wish (excluding the rockets).
Scoop a few tablespoons of the cheese topping onto the pizza.
Place the pizzas, one at a time, in your preheated oven and cook for 15-20mins.
Once done, sprinkle as much of the rockets as you would like over the pizza.
Serve.
