Preheat your oven to 355 ̊F (180 ̊C) and line an 8-inch (20-cm) loaf pan with parchment paper.
To make the vegan buttermilk alternative, add the apple cider vinegar to the soy milk, stir and let thicken for 5 minutes.
Beat the olive oil and sugar together, then stir in the buttermilk, vanilla and grated apple. Sift the self-rising flour, baking powder and baking soda. Add the dry ingredients into the wet mixture along with the cinnamon, mixed spice, ginger and a pinch of salt. Fold the wet and dry ingredients together to combine, then transfer to your loaf pan.
For the crumble mixture, combine the butter, sugar and plain flour together to form little crumble clusters and scatter these over your loaf. Bake for 40 minutes, until beautifully golden and crisp on top.
