Vegan Taco Salad

Ingredients

  • 1 cup of black beans - cooked or from a can
  • ½ cup of corn kernels
  • 4 cups of chopped romaine lettuce
  • ½ cup of tortilla chips
  • ½ cup of chopped red pepper
  • 1 cup of halved cherry tomatoes
  • half an avocado - sliced
  • cucumber
  • Garnishes: lime slices and chili hot pepper spices

Guacamole creamy salad dressing:

  • 1 piece of jalepeno slice - jarred
  • 1 whole avocado - pit removed
  • ½ tsp of salt - pink
  • 1 tsp of cilantro paste - or a handful of cilantro minced
  • 1 tsp of garlic paste - or 1 garlic glove minced
  • juice of half a lime
  • ½ tsp of onion powder

Instructions

  • Prep all the salad ingredients. Mix together.
  • Prep the creamy guacamole dressing ingredients, mix together.
  • Mix the salad with dressing before serving and enjoy!
