Ingredients
- 4 figs - sliced
- 1 cup of blueberries
- ½ cup of microgreens
- 4 cups of mixed greens
- ½ cup sliced cucumbers
- ½ cup of pumpkin seeds and/or almond slices
Instructions
- Mix all together and add a vinaigrette of choice

Ingredients
- ½ cup of vegan feta
- ½ cup of sliced olives
- 4 cups of lettuce like escarole
- ½ cup of candied pecans - toasted with maple syrup, crumbled
- 2 cups of cubed watermelon
- ½ cup of chopped cucumbers
- ¼ cup of mint leaves - minced
Instructions
- Add all the ingredients to a bowl and toss. I didn't add any dressing 🙂

Servings: 4 servings
Ingredients
- 1 cup of black beans - cooked or from a can
- ½ cup of corn kernels
- 4 cups of chopped romaine lettuce
- ½ cup of tortilla chips
- ½ cup of chopped red pepper
- 1 cup of halved cherry tomatoes
- half an avocado - sliced
- cucumber
- Garnishes: lime slices and chili hot pepper spices
Guacamole creamy salad dressing:
- 1 piece of jalepeno slice - jarred
- 1 whole avocado - pit removed
- ½ tsp of salt - pink
- 1 tsp of cilantro paste - or a handful of cilantro minced
- 1 tsp of garlic paste - or 1 garlic glove minced
- juice of half a lime
- ½ tsp of onion powder
Instructions
- Prep all the salad ingredients. Mix together.
- Prep the creamy guacamole dressing ingredients, mix together.
- Mix the salad with dressing before serving and enjoy!
