Ingredients You’ll Need for This Veggie Sushi

Sushi rice & seasoning

  • Sushi rice
  • Water
  • Rice vinegar
  • Sugar
  • Salt

Sushi Roll Filling

  • Cucumber roll: cucumber, julienne cut
  • Avocado roll: avocado
  • California roll: sesame seeds, julienne cut cucumber, avocado, vegan crab or fish slices
  • Spicy โ€˜tunaโ€™ roll: vegan โ€˜tunaโ€™ and spicy mayonnaise

How To Make This Veggie Sushi

Step 1: Preparation and Cooking of Sushi Rice

Place the sushi rice into a deep pot and cover with cold water. Swish the rice around until the water goes cloudy, then drain out as much water as possible. Keep repeating this process until the water is completely clear. This normally takes about 3-4 rinses. Place washed and drained sushi rice into a medium size pot, add water, and cover with a lid. Bring contents to a boil and then reduce heat to low and simmer for 20 minutes until the water has been absorbed and the rice is tender. Remove from heat and set aside to cool (with the lid on) for 10 minutes. Remove the lid and fluff cooked sushi rice with a fork.

Step 2: Creating Sushi Rice Seasoning

Prepare the sushi rice seasoning. Place the ingredients into a small bowl (or a mug) and heat in the microwave for 1.5-2 minutes, until the sugar has dissolved. If your microwave is particularly hot then play it safe by heating for one minute, removing and stirring, then returning for an additional 30 seconds until the sugar has dissolved. Pour sushi rice seasoning over the cooked rice and carefully stir through.

Step 3: Assembling and Rolling Sushi Rolls

Place nori sheet โ€“ shiny side down โ€“ on the counter or on a bamboo mat. Spread 1/2 cup cooked sushi rice over 2/3 of the nori sheet (leaving the last 1/3 bare). Add your favorite sushi roll fillings to the center of the sushi rice. Pick up the width of the nori sheet with the rice, and roll the sushi up, being careful to tuck in the filings and have your sushi roll be tight. Dab a little water on the bare edge of the nori sheet, and then continue rolling up your sushi roll. Set aside and complete rolling the remaining sushi rolls.

Step 4: Slicing and Serving the Veggie Sushi

Using a sharp knife, cut each sushi roll into 6-8 slices and transfer to a serving plate.

Serve immediately with soy sauce, wasabi, and a side of pickled ginger. Enjoy!

  • Spicy โ€˜tunaโ€™ roll: sliced vegan โ€˜tunaโ€™ and spicy mayonnaise
