Pumpkin Banana Bread
A delicious vegan pumpkin banana bread loaf that's perfect for colder days!

Servings: 1 medium loaf
Ingredients
- 1 1/2 ripe bananas mashed
- 1/2 cup pumpkin purée
- 1/4 cup coconut oil melted
- 1 tsp of chia seeds
- 1/2 tsp vanilla extract
- 5 1/2 tbsp coconut yogurt
- 6 tbsp coconut sugar
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp pumpkin pie spice mix
- 5 1/2 tbsp vegan chocolate chips
Instructions
- Preheat oven at 375 F.
- In a mixing bowl, combine all ingredients.
- Grease a loaf pan or line it with a parchment paper.
- Pour the batter into the loaf pan and fill it up to center of the pan. Don’t overfill it.
- Top the loaf with banana slices and pumpkin seeds.
- Bake for 25-30 min until golden brown on top and a toothpick comes out clean. Let the loaf cool completely before slicing. Enjoy!
