Today is National Guacamole Day! To celebrate the occasion, we wanted to share an amazing guacamole recipe with you, so we asked Charly from Charly’s Vegan Tacos himself and he graciously agreed to share his famous Guacamango recipe with our readers, so that you too, can start making it at home!
Charly’s Vegan Tacos is a Mexican restaurant in Miami, Florida, that serves vegan food designed for meat lovers and made for vegans and vegetarians. Some of you may still remember their original restaurant in Tulum, Mexico, serving the very best vegan tacos. The restaurant may have moved to Miami, but the quality of the food remains the same, so be sure to stop by if you’re ever in Wynwood, Miami.
In the meantime, here’s the recipe for Charly’s Guacamango:
Charly’s Vegan Tacos’ Famous Guacamango Recipe (Mango Guacamole)
Charly’s Vegan Tacos’ Guacamango
Ingredients:
- 3 ripe hass avocados
- 2 cups ripe diced Manila mango (can use any mango variety if Manila is not available)
- 1/2 cup diced red onion
- 1/2 cup fresh chopped cilantro
- 2 limes
- 1 tsp salt
- 1/2 tsp fresh ground black pepper
- 4 cloves garlic
- 1/2 cup EVOO (Extra Virgin Olive Oil)
To prepare the roasted garlic oil:
In a small sauce pan, add the 4 cloves of garlic and the EVOO, cooking on low heat until the garlic becomes slightly charred. Once this occurs, remove the pan from heat and add the garlic and oil to a food process or blender to liquify. Set aside.
To make the guacamango:
In a large mixing bowl, add the ripe avocados (they have to be perfectly ripe; to check, remove the stem and check—it should be yellow-ish in color), diced mango, diced red onion, and cilantro. Squeeze the juice of 2 limes over the ingredients and add the salt and pepper. Using a whisk, mash all the ingredients until you have a chunky, rustic consistency (not a purée). Pour the roasted garlic oil on top and
Mix all together. Taste and you can add more salt and pepper to taste. Serve with your favorite chips and enjoy!
