Sweet and Sour Soba Noodles

Ingredients

  • 2 portions soba noodles
  • 1 medium onion - chopped finely
  • 1 large carrot - peeled and chopped
  • 2 tbsp tamari
  • 1 tbsp maple syrup
  • 1 tsp hot sauce - optional
  • 2 tbsp rice vinegar
  • ½ cup water
  • 2 tsp cornstarch

Instructions

  • Cook the noodles according to packaging. 
  • Meanwhile, add the onion and the carrot to a non-stick frying pan. Sauté for 2-3 minutes until softened. 
  • Meanwhile, make the sauce by stirring together the tamari, maple syrup, hot sauce, rice vinegar, water and cornstarch. 
  • Once the noodles are done, drain and rinse them and transfer to the frying pan together with the sauce. 
  • Toss together until the noodles are coated evenly and the sauce has thickened.
