Sweet and Sour Soba Noodles

- 2 portions soba noodles
- 1 medium onion - chopped finely
- 1 large carrot - peeled and chopped
- 2 tbsp tamari
- 1 tbsp maple syrup
- 1 tsp hot sauce - optional
- 2 tbsp rice vinegar
- ½ cup water
- 2 tsp cornstarch
Instructions
- Cook the noodles according to packaging.
- Meanwhile, add the onion and the carrot to a non-stick frying pan. Sauté for 2-3 minutes until softened.
- Meanwhile, make the sauce by stirring together the tamari, maple syrup, hot sauce, rice vinegar, water and cornstarch.
- Once the noodles are done, drain and rinse them and transfer to the frying pan together with the sauce.
- Toss together until the noodles are coated evenly and the sauce has thickened.
