In this article, you’ll learn how to make your own delicious and refreshing pastel-colored 2-ingredient sorbet. Don’t have a juicer? 2-Ingredient Apricot Watermelon Sorbet – A Pastel Delight

If you love watermelon and want to make an easy, refreshing, and healthier dessert, this sorbet might be the perfect fit. The combination of watermelon and apricot gives it a unique touch and a beautiful pastel color.

Ingredients You’ll Need

You’ll only need two ingredients to make this sorbet: watermelon and apricots. You can, of course, use any frozen fruit you like! Some other great options would be any other type of melon, peaches, or oranges.

In order to make sorbet with a juicer, you’ll need a cold-press juicer with a sorbet attachment. My two favorite options for this are Nama’s J2 & Nama’s C2 Juicers. They’re essentially the exact same juicer, but the C2 also includes a high-speed blender function. Additionally, the C2 also includes a sorbet attachment (which needs to be purchased separately for the J2 Juicer.)

How to Make This Apricot Watermelon Sorbet (With a Juicer)

Step One: Freeze the Apricots & Watermelon

To make your own sorbet, you can either use store-bought frozen fruit chunks or freeze your own. I love to use fruits that you don’t typically find the frozen foods section, so for this recipe, I froze my own apricots and watermelon.

To freeze apricots, slice them into quarters (removing the stone during the process), then place them on a baking tray lined with parchment paper. Freeze for at least 4-6 hours (ideally overnight).

Remove the rind of the watermelon, then cut it into chunks and repeat the same process as with the apricots.

Step Two: Add The Frozen Apricot & Watermelon pieces To Your Juicer

Right before making your sorbet, set up your juicer with the sorbet attachment, then remove the frozen watermelon and apricot chunks from the freezer (for the best result, don’t let them thaw for more than 2-3 minutes.)

Next, add your frozen fruit to your juicer’s hopper. You can either add everything add once, then turn on the juicer, or add a little, turn on the juicer and then continue adding the frozen fruit chunks little by little.

Adding everything at once is a bit more convenient, but you my need to open the juicer’s hopper and give it a little stir with a spatula every once in a while if the frozen fruit pieces get stuck.

Step Three: Turn on Your Juicer & Start Making Sorbet

Now, all you need to do is turn on your juicer and watch it make your apricot watermelon sorbet. Be sure to add a container (either your juicer’s pulp container, or any of a similar size) to catch the sorbet.

Transfer the sorbet to an ice cream container (I used this one) and smoothen it using a spatula.

Step Four: Serve & Enjoy!

Using an ice cream scoop, scoop the apricot watermelon sorbet into small bowls, serve, and enjoy!

Ingredients

  • 2 1/2 cups watermelon chunks
  • 2 1/2 cups sliced apricots

Instructions

  • Slice the apricots and remove the stones, then remove the watermelon's rind and cut it into chunks.
  • Place the fruit pieces on baking trays lined with parchment paper, making sure you leave a little space between the pieces. Next, place them in the freezer and freeze for at least 4-6 hours, ideally overnight. TIP: If you're making your sorbet on a later date, you can transfer the fruit pieces to a reusable container once frozen and store them in the freezer until you're ready to make this recipe.
  • To make the sorbet, start by setting up your juicer: add your sorbet attachment and plug in your juicer (see the notes below on how to make this sorbet without a juicer).
  • Once everything is ready to go, remove your frozen fruit chunks from the freezer (the ideal thaw time is just about 1-2 minutes). Next, either place them all in your juicer's hopper, then turn the juicer on, or alternatively, turn the juicer on first, then add the frozen chunks once by one. Both methods will work, but when adding the fruit all at once, the frozen fruit pieces might stick to each other, so just beware of that.
  • Next, transfer the sorbet to an ice cream container (or any reusable container) and smoothen it using a spatula. Serve immediately using an ice cream scoop and enjoy!
